I took this recipe by
Snack Girl for Baked Oatmeal and cut it in half. Her recipe shows 170 a serving, My Fitness Pal puts it at 140. Either way, it was easy and yummy. I have made it twice now. Both times I made it the night before and then just reheated a serving the next morning. I like that it had some texture to it - more so than a bowl of fresh made oatmeal. The full recipe is
here. Here is my version of 1/2 - four servings.
Baked Oatmeal Recipe - 4 servings
Dry ingredients:
1 cups old fashion oats
1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2 tsp allspice (I didn't use this, but 1/2 tsp would be the correct amount for this portion)
1/2 tsp cinnamon (1/4 would be correct, I used 1/2. I like cinnamon)
Wet ingredients:
1 1/4 cups sliced fruit
1/2 cup milk (I used 1%)
1/2 cup plain yogurt (I used Greek)
1 egg
1/8 cup maple syrup, honey, brown sugar, or sugar (I used brown sugar)
Preheat
oven to 350F. Spray nonstick spray on a 8x8 baking dish (or
equivalent). Mix dry ingredients and then mix in wet ingredients.
Spoon into pan and cover with foil. Bake for 20 minutes, remove foil,
and bake for another 25 minutes until golden brown.
Enjoy hot, cold, or room temperature. If well covered, this will keep in the fridge for one week.
The first time I used 1 mashed banana and 1/4 cup mashed blackberries.
The second time I did all banana in the hopes that Bonham would eat it.
He actually had a bite of the first version....but didn't like the berries. He has yet to try the second version. I heat up my portion in the microwave. I like that it is warm and soft in the center, but still has some texture to the outside.

Oh that sounds good! Lately I've been making this oatmeal for breakfast. It's so yummy!
1 banana sliced
1/2 C. rolled oats (not instant_
1/3 C. pomegranate juice
2 tbs currants or dried cranberries
1/2 C. frozen blueberries (or fresh)
I sprinkle mine with raw sunflower seeds.
Nuke it in the microwave for 3 minutes. The bananas become mushy and totally sweetens it. You can make it the night ahead and eat it cold in the morning but I like it warm.

My friend made this for us last weekend. I had never thought to bake oatmeal.
I've been hearing a lot about baked oatmeal lately and it sounds yummy. Going to have to try that.
